Potsticker

I don't know about you ...but I LOVE Sam's and Costco.. I found these potstickers at Sam's and my kids LOVE IT!! They can eat it everyday ..which seems like it ever since we discovered it LOL

This is what we been having for lunch lately!!! 

It's super easy to make. All you need is a nonstick 10 or 12in frying pan and a lid. 
My kids usually eat 2 packs so I stick both pack in the pan at once. Turn the heat to medium low and cover. After about 5 minutes uncover and turn the heat to medium and start to turn them on their sides. I like mines crunchy on all sides so I turn them so all sides gets cook and crunchy. 
The direction on the box is different than mines. 
It's super easy to make!!! 
They also include the dipping sauce in the box. 

Each box contain 5 package for around $10.00 

It's in the freezer department at Sam's

Meatball in a Crockpot

During the summer my meals are usually very quick and simple.. especially since it's so hot to stay in the kitchen for long...I usually make many MANY CROCKPOT meals. 

Ingredients: 
1 bag of meatball 
1 jar of tomato basil marinara sauce 
1/2 C strawberry jam 
1/2 tsp garlic powder 
1/4 tsp Tony Chachere's 
(If you like.. you can add some chopped onion, bell pepper and celery) 



Crockpot

Throw everything in a crockpot and set it on low for 4 hours!!! 

DONE!! 
Serve with Hawaiian sweet bread 
Or butter pasta

Corn Bread

Whenever we have red beans and rice or GUMBO ... We usually have it with corn bread. Sometimes I mix it up and add a can or cream of corn, sliced jalapeño or 1 C cheese...  This time I made a plain but delicious batch. 


Ingredients: 

2 C yellow cornmeal

2 C all-purpose flour

1 C (white) sugar

2 TBS  baking powder

1 TBS  salt

2 C  whole milk

1/2 C unsalted butter, melted (1 stick) 

1/2 C honey

4 eggs 

1. Preheat oven to 375 F. Spray a baking pan with nonstick cooking spray. 

2. In large bowl, whisk cornmeal with flour, sugar, baking powder and salt until combined. Set aside.

3. In medium bowl, whisk milk with melted butter, honey and eggs until combined. 

Add milk mixture to cornmeal mixture, and  to stir until just combined. Don't over stir. 

4. Transfer batter to prepared baking pan and bake for 30 minutes, or until golden brown. 

****Let corn bread cool slightly before slicing and serving.

Spread a little butter or drizzle with more honey!!

Blacken Shrimp

While the kids had their swimming lessons this morning, I took the opportunity to prep some of my meals  for this week. Most of what we are eating this week deals with shrimp or crawfish... So I peeled 4 pounds of shrimps and portion them out to each meal. So during the week all I have to do is.. Grab a container and season it the way I like. 





Since I already had the shrimps out and peeled .. I decided to make lunch and dinner with the shrimp. 
Blackened Shrimp to go with my Caesar Salad for lunch and dinner it's gonna be Shrimp Tacos (all I have left to cook is the chicken.. sauté the onion and bell peppers) 

Ingredients: 
1 pound peel and clean shrimp 
1 tsp blackened seasoning 
1/2 tsp garlic powder 
1/4 onion powder 
1 tsp Worcestershire sauce 
1/2 tsp paprika 
1 tsp Extra Virgin Olive Oil 

I mix all the seasoning up with the peeled shrimp.. Marinate for about 30 minute to 1 hour in the refrigerator 

In a grill pan.. With a little olive oil.. Pour the whole container into the grill pan. Try to lay the shrimp in 1 layer .. Keep a close eye for they cook really fast.  I cooked it for about 5-7 minutes. 
Garnish with sliced green onions.
