Spring Roll and Dipping Sauce

I think Spring Roll is one of the easiest food to make and very FULLFILLING. You can basically use anything that you have on hand and it still taste great.

SPRING ROLL 

Ingredients: 
1 lb of Pork Loin
16 big Shrimp (boiled, peeled, devein and cut in half--that is why I like to use the large shrimp)
1 bag vermicelli noodle
Plain omelet--cut into thin little stripes
Romaine Lettuce
Cucumber--cut into thin long stripe
Bean Sprout
Mint Leaves
Cilantro

RICE Paper

Direction: 
1. Cook the pork by boiling them then drain and slice very THINLY. Cook the shrimp in boiling water until pink..peel and devein and CUT IN HALF.

2. Cook the Vermicelli noodle according to package.

3. Soften the rice paper by dipping it into some luke warm water--one sheet at a time then lay it on a slat surface (I usually lay it on a plate)

4. Next start to build your roll. Start by placing some lettuce then vermicelli noodle, pork and veggies on the side (corner) nearest to you.

5. Roll the rice paper away from you like a burrito.

Bean Dipping Sauce
Ingredients:
1 Cup Water
1 small Onion--finely CHOPPED
4 Clove of GARLIC MINCED
1/2 Cup Hoisin Sauce
1/4 Cup Bean Sauce ( they have many variety sold at the store--I just used the PLAIN bean sauce, but I have used the one with GARLIC)
1/4 Cup Sugar
3 Tbsp CREAMY peanut BUTTER
****CRUSHED peanut ---use to sprinkle on top


Direction:
In a NONSTICK sauce pan over medium low heat with a little oil ...cook the onion and garlic until translucent. Next mix all the other ingredients into the sauce pan and CONTINUE to STIR until everything is MIX.  Remember to KEEP and EYE on it for it will burn very easy....cook for about 5 minutes and continuing  to stir. Take off heat and let cool and serve up with some crushed PEANUT on top. I usually add some srirache on top also....because I like a little HEAT.

Lemon Butter Clams (Essential Oils)

We went out if town this past weekend and every time we are in Pensacola, Florida...we would stop by Joe Patti (local seafood store) so I can grab some seafood. I LOVE  that place.  Every time we go there..I never leave without buying an icechest full of fresh SEAFOOD. 
This trip I got some really good clams,lobsters, LUMP crab meat, fresh filet of assorted FISHES. 

I grabbed 3 bags of clams for dinner that night knowing that we be home late and the kids would be starving....since it is the easiest and QUICKEST to make. 

Ingredient: 
Clams (washed and clean--I just used a scrub that I have for clams n mussels--set aside in a colander to drain all excess water) 
1 Stick Butter 
4 cloves garlic (minced)
2 C White Wine 
4 drops of Lemon Essential Oils 
1 lemon cut into thin slices (garnished) 
Salt 
Pepper 
Chopped parsley (garnish) 


Direction: 
In a big sauté pan I melted my butter and threw in the minced garlic .. Cook until the garlic is translucent. Be careful not to burn the garlic. Then pour in the  2 C white wine and  clams. Then added the LEMON ESSENTIAL OILS. Then cover for about 15 minutes. Making sure the clams is open.. Toss the clams that are not open. 
Uncover and toss until all the ingredients are nicely incorporated. Taste and add salt and pepper to taste. 
Pour into a deep dish and garnish with lemon slices and chopped parsley.

Breakfast Muffin

Breakfast Muffin


Ingredient: 

1 can of Grand Flaky Biscuit 

(I didn't used the whole biscuit because it would be to thick so I halve them. My biscuit was 8 so made 16 muffins) 


Sausage (you can use any thing you like..I have used bacon and diced ham before) 


Mexican blend cheese (you can use any kind that you like) this was what I had on hand. 

Muffin tin 

Cooking spray 

Preheat oven to 350 


I halve the biscuit and lay them into a grease muffin pan. Next I broke up my sausage and put in the middle of each biscuit and sprinkle with cheese. Bake at 350 for 15 minutes. 


Next time I am gonna add some veggies like diced bell pepper or spinach

Spicy Corn Dip

During the Holidays I love to try different appetizers ...especially since we attend so many get togethers and parties. I usually like to bring a dish and I find that bringing an appetizer or dessert is usually the best dish to bring. 
I got this appertizer dip from "The Chic Site" I did tweak it a little according to my taste. 

Spicy Corn Dip 

Ingredients:
3 tablespoons butter
1 yellow onion, finely chopped
5 garlic cloves, minced
1 large red bell pepper, chopped
4 cups corn (frozen) 
2 cups medium cheddar cheese, shredded
3 cups pepper jack cheese, shredded
2 cups cream cheese, softened
1 1/2 cups mayo
1/2 cup cilantro, chopped
1 cup scallions, chopped
2 tablespoons chipotle in adobe puree
2 tablespoons hot sauce, or more if you like it super spicy
1/2 teaspoon salt
1/2 teaspoon black pepper

Instructions: 
Preheat oven to 350° F.
Heat a LARGE skillet over medium heat. Add butter and sauté the onions, garlic, red bell pepper, and corn until soft and translucent, about 5 minutes. Remove from heat and stir in the cream cheese until combined.

Mix the remaining ingredients in a large bowl with the cilantro, green onion (scallion)  and cream cheese/corn mixture. I left about a cup of cheese to sprinkle over the top and added a few pat if butter just so it can get a nice brown cheesy top. 

Taste and adjust seasonings accordingly. Pour the dip into an oven-safe baking dish. Bake for about 30-45 minutes, or until the top is golden brown and the edges are bubbling.
Serve hot out of the oven with TORILLA chips!!

Pizza in a BUNDT pan

Ingredients: 
1 can of grand biscuit (cut into 4) 
1 C pepperino (cut in half or 4) 
1 C harvarti cheese 
Dash Tony's Chacherie 
1/2 t Italian Seasons  

Cut everything into bite size 
I just toss a few BIG pieces of pepperoni on top so it can look pretty 😉

Toss everything into a grease bundt pan 
Bake at 350 for about 45 minutes .. I think it depends on your oven and the pan that you used. 

Enjoy!! 

Can use some marinara sauce for dipping
